Ingredients
2 cups cooked quinoa
8 large eggs (2 beaten)
1/3 cup fresh chives, minced
2 oinions, finely chopped
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
3 cloves garlic, minced
250g spinach leaves
1/2 tsp salt
Olive oil, for frying patties
This recipe tastes best when eaten fresh, and only takes a few minutes to make. It makes a great light lunch to enjoy whilst catching up with friends or playing Foxy Bingo, but looks good enough to serve at a more formal event, such as a dinner party. Start by simply combining the cooked quinoa, 2 beaten eggs, salt, chives, onions, 2/3 of the Parmesan cheese and the garlic in a medium sized bowl. Once blended you can add the bread crumbs, and stir to gently. If the mixture seems a little dry, then you may also need to add a dash of water.
Next, separate the mixture into six evenly sized patties. Heat olive oil in a frying pan, then add the patties, ensuring that there is a gap in between each one. Cook on a medium heat for around four minutes, or until they are beginning to turn a light golden brown. Then, you will need to flip each patty over, and continue to cook for a further four minutes. Serve on a bed of spinach, and top with a soft poached egg. Sprinkle with the rest of the grated Parmesan, and season with salt and pepper to taste. This dish also makes a great healthy alternative to traditional cooked breakfasts!
