Do you have little pieces of paper, scribbled with recipes all over the house? Diaries, filled with recipes that mesmerize you. A laptop filled with bookmarks that are threatening to crash it with overload. A library that is slowly but steadily filling up with cookbooks and food magazines and the management books (the hubby) are felling threaten.
I sometimes get overwhelmed by all that I want to make and so little time to do it! Then I simply open up one of those many books and go though them to begin the journey one step at a time. Maybe not all; but a chosen few. So here is one delicious recipe I rediscovered and I am sure you will love it too. Enjoy !
Classic Brownies :
Walnuts/cranberries ½ cup
Cake flour ¾ cup(all purpose flour + 1 tsp corn flour)
Baking powder ¾ tsp
Chocolate 70 grams
Butter 6 tbsp (room temperature)
Sugar 1 cup
Eggs 2
Vanilla essence ½ tbsp
• When using walnuts bake the nuts in the oven for 7-8 minutes at 160C till fragrant.
• Preheat the oven at 175C and line a greased a 6”X6” baking dish with parchment paper.
• Put the chocolate and butter in a microwave safe vessel and heat for 30 seconds. Mix well.
• Add the sugar and incorporate.
• Add one egg at a time and mix well.
• Add the vanilla essence, cake flour, baking powder and mix till incorporated. Don’t over mix.
• Bake for 30 – 35 minutes. To get a gooey brownie bake for 25 minutes and check. A toothpick should come out with a few crumbs.
• For a chewy brownie the toothpick should come out clean.
• Let the brownie cool in the baking dish but take it out while still warm and remove the parchment paper.
Makes : 9 brownies.
