It is again the last Monday of the month. Another delicious Secret Recipe Club reveal is underway all around the world. Wondering what this is about? This month, I was assigned a blog that touched my heart with its name. I was certain that I would find some delicious hidden treasures, what I found was, well a super treasure. This website is a baker’s delight. Imagine reading recipe after recipe and wanting to make them all. This month’s assignment was threatening to become a daily pleasure trip for me. The More Than Occasional Baker is maintained and developed by Ros AKA Baking Addict. The blog is a celebration of everything delicious and delightful. I had a hard time choosing my favorite and a few that were in competition are Weight Watchers Coffee Tiramisu Cake, Chocolate Hedgehog Cupcakes (how cute are those), Chocolate Marshmallow with Blackcurrant Jam filling, but the winner was – Congo Bars. Why you wonder? One look at the ingredient list had me intrigued. I have seen so many recipe use M&M’s that I couldn’t hold back any long. The M&M’s got replace by the Desi version Cadbury Gems and the Congo Bars were baking away in the over happily.
Congo Bars :
From : The More Than Occasional Baker
Flour 1 1/3 cup
Baking powder 1 ¼ tsp
Salt ¼ tsp
Butter, softened 1/3 cup
Brown sugar 162 grams
Eggs 2
Vanilla essence ½ tsp
Chocolate chunks 50 grams
Cadbury Gems 100 grams
• Preheat the oven at 180C. line a 6”X6” baking dish with parchment paper.
• Mix the flour, baking powder and salt into a large bowl and set aside.
• Stir the brown sugar into the softened (not melted) butter till it is mixed well.
• Add the eggs one at a time to the batter and mix well after each addition.
• Add vanilla, chocolate chunks and Cadbury gems. Mix well.
• Add dry flour mixture and stir until well combined.
• Pour into the baking pan and bake for 25 – 30 minutes until the top is golden brown and a toothpick comes out clean.
Makes : 16 bars.
