Baked Mushrooms

SONY DSCMushrooms are not very commonly or easily available in India. The only variety, if available, is button mushrooms. I have not very often tasted a very delicious mushroom dish either. Mushrooms used as starters, is hardly heard off. I am sure by now you realise how little exposure I have to mushrooms. Having studies in school about mushrooms being a form of fungus I was never really keen on eating or cooking them.
But, last week while doing my weekly veggie shopping I came across a box of mushrooms that looked delicious. White in colour they looked fresh and plump and my hand just went out to pick a box. I was hypnotized by fungus.
Once home I started searching for a simple dish that would be delicious, sumptuous and healthy. Elise’s beautiful blog Simply Recipes provided the solution. Beautifully baked, stuffed mushrooms that looked and tasted heavenly was a dish I could not resist.
Easy to make and a perfect party starter, this is a dish I will go back to time and again. Here is the show stopper for you.
SONY DSCBaked Mushrooms :-
(Adapted from Simply Recipes)
Button Mushrooms 18–20
Onions (paste) 2
Garlic paste ½ tsp
Fresh Coriander leaves (chopped) 2 tbsp
Bread crumbs 2 tbsp
Salt & pepper to taste
Apricots/Walnuts 8 – 10
Cheese (grated) 1 cube (I used regular processed cheese easily available in a super market, but Elise has used a different variety)
Extra Virgin Olive Oil 1 – 2 tbsp
•Scrub and wash the mushrooms well. Remove the stems from the mushrooms carefully and chop them up. Pat dry the mushrooms heads with a kitchen towel.
•Heat 1 tbsp of olive oil in a frying pan and fry the onion paste till translucent. Add in the garlic and chopped mushroom stems and fry till done.
•Remove from heat and add in the salt, pepper bread crumbs and apricot.
•Now grind the whole mix to a fine paste.
•Fill the mushroom heads with the stuffing and top with grated cheese.
•Preheat the oven at 180C and bake for 20 minutes, till the tops brown slightly, the mushrooms release some juice & the bodies look slightly shriveled.
•Serve warm with mayonnaise or chimichuri.
Serves : 2 very hungry & greedy people. Otherwise 4.
